Labor Day with Nonnie and Pop-Pop

This morning I had some wonderful help make our Pioneer Woman's Coffee Cake for our day with Nonnie and Pop-Pop.  We were so excited to see them and the kids were pumped when they finally arrived!



OH and this is what Lucy was doing while we were busy cooking....
         

We hung out outside for most of the afternoon because it felt so good outside!


For dinner we had steaks, baked potatoes, grilled onion, salad and coffee cake/coffee for dessert.   Check out these HUGE steaks!!!  This was Jay's steak by the way, not mine!  LOL  Jay grills the best steaks...they always taste soooo good!

This is the Pioneer Woman's Coffee Cake we made for dessert...I had never made it before but it was DE-LIC-IOUS!  Seriously, make it...you will love it! (I left out the pecans.)

Recipe: The Best Coffee Cake. Ever.

Ingredients

  • FOR THE CAKE:
  • 1-½ stick Butter, Softened
  • 2 cups Scant Sugar
  • 3 cups Flour, Sifted
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-¼ cup Whole Milk
  • 3 whole Egg Whites, Beaten Until Stiff

  • FOR THE TOPPING:
  • 1-½ stick Butter, Softened
  • ¾ cups Flour
  • 1-½ cup Brown Sugar
  • 2 Tablespoons Cinnamon
  • 1-½ cup Pecans, Chopped

Preparation Instructions

Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Beat egg whites and set aside.
Cream butter and sugar. Add flour mixture and milk alternately until combined. Don’t overbeat. Fold in beaten egg whites with a rubber spatula. Spread in a well-greased 9 x 13 (or LARGER!) baking pan. A cake pan with higher sides would be best.
In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.
Bake for 40 to 45 minutes, or until no longer jiggly. Serve warm—delicious!

Oh Nonnie brought me some happies for my late birthday gift...love 'em!  They also brought happies for the kids and Jay too!  :)  Thanks Nonnie and Pop-Pop!


After we ate we headed out to the back of our property to pick muscadines.  We have a TON of them on our property and Nonnie wanted some to take home to Grandmother and Pinto.  Of course, the kids are always up for the adventure!






Pop-Pop drove the tractor out to the fields and all the kids got a ride!





Lucy "helped" pick muscadines too!  Seriously she was in the back of the truck with Jay and Nonnie and if one fell she would pick it up and put it in the bucket and say "Uh Oh!"


Somebody else was hiding out in the truck snacking on these....

It was such a fun day with Jay's family!  We hated to see them go!
