Audrey's Chicken Noodle Soup
chicken noodles soup
ingredients:
rotisserie chicken
12 cups (96 oz) chicken broth
1 cup chopped celery
1 cup finely chopped onion

2 cans sliced carrots (drained)
1/3 cup cornstarch

3 to 3 1/2 cups egg noodles (uncooked)
salt, pepper, garlic powder, oregano

place (cooked) rotisserie chicken, and all the drippings, in a large pot.
pour all the chicken broth into the pot. add celery, onion & carrots. sprinkle in seasonings. (i just season to taste). bring to a boil. reduce heat, cover & simmer for 15 minutes.

after 15 mins remove the entire chicken. (it may have fallen apart in the pot so make sure no skin or bones is left in the broth.)
allow the chicken to cool for a few minutes before you pull meat from the bone.
while the chicken is cooling pour cornstarch into a bowl. add just enough water to turn cornstarch to liquid. (stirring constantly).
add liquid cornstarch to broth, slowly. stir well.
separate chicken from the bone. dice, shred or cut chicken.
add chicken to broth. add raw noodles to broth and allow it to simmer, uncovered for 15 minutes.
taste broth and add more seasonings as needed.

i always buy an extra can of broth. as soup cooks it may absorb broth so you can always add more! it may also need a little extra broth the next day!
